Birthplace of the Original Louisiana Tabasco Hot Sauce - Avery Island, Iberia Parish, Louisiana (Vermilion Bay).

We visited the natural features of the area.
Not to be missed, Avery Island, famous for its Tabasco sauce factory, deposits of rock salt, and the Gardens Trail.  

The Tabasco factory tour is self-paced with viewing rooms on how the sauce is made.  Tabasco is a brand from Tabasco peppers, vinegar, and salt. 
It is the McElhanney family-owned Company, founded 1868--149 years ago…. about the same as Canada becoming its own country!





The peppers on the island are used to produce seed stock.  There were red sticks around the trail indicating that peppers must match the color of the stick to ensure ripeness and timely pick.  The grinding warehouse full of mash with salt added into white oak barrels.  


After aging for up to 3 years, strained and liquid is then mixed and bottled as the finished sauce.  The salt comes from Avery Island salt mine, one of the largest in the U.S.

McElhanney's son has expanded their property on Avery Island encompassing a complete drive-around,
170-acre botanical garden and bird sanctuary.  

The beautiful oak trees bear over 200 years of Spanish moss that cling to their limbs.  Spanish moss was used to stuff mattresses during the war and the seats of model Ts.

4/17/2017 West Louisiana - Caribbean Ice Company

Caribbean Ice Company
New Iberia, Louisiana

Tim and I went for ice cream.... stayed for the food.
 ‘Scrap’ Burgers with Caribbean Spice is the best.  
Met the owners: Skip and Pamela Farris Shensky skipir10yahoo.com.  We spent hours talking about their history and the business they have created with their, now grown, children for over 20 years.  Their menu is designed with Weekly (nearly daily) Specials for the community.




Heirloom Tomatoes are grown here at the Restaurant.  Delicious on their burgers!!







Their two sons are now chefs.  Elizabeth, their daughter has schooled at a pastry school in New York.  Tim and I now plan a visit with her in Cape Cod, Massachusetts.
Souvenir given us: Caribbean Ice Company "Caribbean Spice".  Yes, they make it there!

4/16/2017 The Bayou: A Day in the Travels of CasaRoll

Our address, while on the road, reminds me of our motto from our 
CCYC Commodore T-shirts:
"Ya Had To Be There". 

  Along Bayou Teche: From West Louisiana to New Orleans.
Tim and I (and Woodstock, the kitty cat) took our last glance of the New Iberia RV Resort in our rear view mirror and headed onto the back road called the Old Spanish Trail Highway for a quick 
(2 hours) travel to our next place to abide: Tiger Oaks Park in Gibson, a community in the Terrebonne Parish, with just one Louisiana zip code: 70356.





The houses along the Atchafalaya River where it joins to the Bijou are apparently serving the needs of those that live along the banks. 

No matter to the square footage of the house, the South holds true to its identity with its massive green lawns and oak trees rooted from those long-ago fervent times.




Our front yard while in Western Louisiana!  Green grasses everywhere are groomed and mowed!!
